Another Busy Monday

Xangos or churros, anyone?When I first began to manage Mondays, I always felt apologetic to the staff for the slow business that came along with being open on a Monday.

"I'm doing all that I can to get more business in here on Mondays," I'd tell them. "I want to see all of you leave here with decent money."

Although Mondays were relatively quiet, it did allow for a nice evening out for our customers and for rendering great customer service on the part of the waitstaff and runners.

These past few Mondays have been very busy. That's a good thing. While other restaurateurs come in here and lament how slow the summer has been, I simply bite my lip, nod my head and think, "Hmmm...well, we haven't been slow."
